Vinař rozhoduje o výnosu dřív, než réva začne růst: počet ponechaných oček určuje, kolik hroznů keř ponese. Řez se dělá za vegetačního klidu. Hustota výsadby k tomu přidává druhý rozměr: víc keřů na hektar znamená menší úrodu na keř a hlubší kořeny.
The grower decides the yield before the vine starts growing: the number of buds left sets how many bunches each vine will carry. Pruning happens during dormancy. Planting density adds a second dimension: more vines per hectare means a smaller crop per vine and deeper roots.

Pupeny se otevírají, když půda a vzduch přesáhnou zhruba 10 °C. Od té chvíle réva sčítá teplo: teplotní suma (GDD) je součet denních průměrů nad 10 °C a určuje tempo celého roku. Rašení je zároveň nejzranitelnější okamžik roku, jarní mráz spálí mladé výhony dřív, než úroda začala.
Buds open once soil and air pass roughly 10 °C. From then on the vine accumulates heat: growing degree days (GDD) sum the daily means above 10 °C and set the pace of the whole year. Budbreak is also the most vulnerable moment: a spring frost burns the young shoots before the crop has begun.

Réva kvete nenápadně, deset až čtrnáct dní. Z opylených květů se stanou bobule, z neopylených nic (coulure) nebo drobné bobule bez semínek (millerandage). Déšť a chlad v květu zmenší úrodu na celý rok; od plného květu se počítá zhruba sto dní do sklizně.
The vine flowers discreetly for ten to fourteen days. Pollinated flowers become berries; the rest drop (coulure) or stay as tiny seedless berries (millerandage). Rain and cold during flowering shrink the whole year's crop; roughly a hundred days run from full flowering to harvest.

Bobule přestávají růst, měknou a červené odrůdy se barví; cukr stoupá, kyseliny klesají, taniny v semínkách dozrávají. Odtud se odvíjí fenolická zralost: nedozrálá semínka dávají „zelené“ taniny, o kterých se v zápiscích 2024 mluví opakovaně.
Berries stop growing, soften and the red varieties colour; sugar rises, acids fall, seed tannins ripen. This is where phenolic ripeness starts: unripe seeds give the “green” tannins the 2024 notes mention again and again.

Každá odrůda a parcela dozrává jindy, proto sklizeň trvá tři až čtyři týdny a jde po parcelách, někdy ve více průchodech touž parcelou. Bílé odrůdy první, pak Merlot, pak Cabernet Franc a Cabernet Sauvignon. Datum sběru je nejviditelnější rozhodnutí roku.
Every variety and plot ripens at a different time, so harvest takes three to four weeks and goes plot by plot, sometimes in several passes through the same plot. Whites first, then Merlot, then Cabernet Franc and Cabernet Sauvignon. The picking date is the most visible decision of the year.

Sorting and destemmingTřídění a odstopkování
What happensCo se děje
Hrozny se zbaví třapiny a projdou tříděním, ručně nebo opticky. Rozhoduje se, zda kvasí celé hrozny s třapinou (víc struktury a svěžesti), nebo jen bobule. Šarže se drží zvlášť podle parcely a zralosti, protože jen tak se dá později skládat.
Bunches lose their stems and pass a sorting line, by hand or optical. The choice is whether to ferment whole bunches with stems (more structure and freshness) or berries only. Lots stay separate by plot and ripeness, because that is the only way to blend later.

Kvasinky mění cukr na alkohol a oxid uhličitý; teplota stoupá a hlídá se chlazením. Slupky plavou nahoře a víno z nich louhuje barvu i taniny: klasické máčení (remontage, pigeage) nebo šetrná infuze. Kde a jak dlouho se kvasí, rozhoduje o síle extrakce.
Yeasts turn sugar into alcohol and carbon dioxide; the temperature rises and is held by cooling. Skins float on top and the wine draws colour and tannin from them: classic pumping over and punching down, or gentle infusion. Where and how long it ferments decides the strength of extraction.

Bakterie přemění ostrou kyselinu jablečnou na měkčí mléčnou; víno ztratí část kyselosti a získá krémovost. Kde probíhá, tam se otiskne: v sudu se zároveň spojí s dřevem. Bez ní by červené Bordeaux bylo tvrdé a nestabilní v lahvi.
Bacteria convert sharp malic acid into softer lactic acid; the wine loses some acidity and gains creaminess. Where it happens leaves a mark: in barrel it marries with the oak at the same time. Without it red Bordeaux would be hard and unstable in bottle.

Každá parcela a odrůda kvasila zvlášť; v zimě sklepmistr s enologem ochutnávají desítky šarží a skládají z nich grand vin, druhé víno a to, co půjde jinam. Teprve tady vzniká „víno ročníku“, a proto se kupáž každý rok liší od typické.
Every plot and variety fermented on its own; in winter the cellar master and the oenologist taste dozens of lots and assemble the grand vin, the second wine and what goes elsewhere. Only here does the “wine of the vintage” come into being, which is why the blend differs from the typical one every year.

Víno leží v barrique o 225 litrech, dýchá skrz dřevo, taniny se spojují a hrubost odchází. Každé tři měsíce se stáčí (soutirage, racking) z kalů do čistého sudu; bílá a některá červená zrají na kalech s bâtonnage, občasným vířením kalů. Nové dřevo dává vanilku a strukturu, staré jen dýchá.
The wine lies in a 225-litre barrique, breathes through the wood, tannins polymerise and coarseness leaves. Every three months it is racked (soutirage) off its lees into a clean barrel; whites and some reds age on their lees with bâtonnage, occasional stirring. New oak gives vanilla and structure; old oak only breathes.

V dubnu château poprvé otevřou sklepy a nalévají scelený, ale nedokončený ročník rovnou ze sudu. Víno má za sebou šest měsíců a před sebou dalších dvanáct až osmnáct v dřevě, takže degustátor hodnotí potenciál, ne hotový výsledek. Proto je skóre ze sudu odhad a proto u něj vždy ukazujeme, jak bylo zapsáno.
In April the estates open their cellars for the first time and pour the blended but unfinished vintage straight from barrel. The wine has six months behind it and another twelve to eighteen in wood ahead, so the taster judges potential, not a finished result. That is why a barrel score is an estimate, and why we always show how it was written down.

The estate announces a price, merchants pass it on, buyers pay for wine they will receive two years later. The price reacts to the April verdicts, to the market and to the owner's confidence, and it is the first public number attached to the vintage.

What happensCo se děje
Před lahvováním se víno vyčistí: čiřením (bílek, bentonit), které strhne kaly ke dnu, nebo filtrací, anebo se nechá jen usadit. Pak jde do lahve, korek, kapsle, a půl roku klidu, než opustí château. Kdo koupil en primeur, teprve teď víno drží v ruce.
Before bottling the wine is cleaned: fining (egg white, bentonite) pulls the lees to the bottom, or it is filtered, or simply left to settle. Then bottle, cork, capsule and half a year of rest before it leaves the estate. Whoever bought en primeur holds the wine only now.

V lahvi víno zraje pomalu a bez kyslíku: ovoce ustupuje, přicházejí terciární tóny, taniny se usazují. Kdy otevřít, je otázka za stovky korun i tisíce eur, a odpověď dává jen otevřená lahev. Proto u lahví neříkáme koupit či prodat, ale pít teď, nechat ležet, za zenitem, a jen tam, kde to degustátor zapsal.
In bottle the wine ages slowly and without oxygen: fruit recedes, tertiary notes arrive, tannins settle. When to open is a question worth hundreds of crowns or thousands of euros, and only an opened bottle answers it. So for bottles we do not say buy or sell but drink now, lay down, past its peak, and only where the taster wrote it.

Oak: which species, what toast, how much newDřevo: který dub, jaké vypálení, kolik nového
A barrel does three things: it lets in a little oxygen, which softens tannins and fixes colour; it gives its own compounds (vanillin, coconut lactones, smoke and caramel from toasting); and it releases its own tannins, ellagitannins, hard and drying at first. These are the “oak tannins” a winemaker wants to shed, or to use as a skeleton. Bordeaux uses oak only: French sessile (Quercus petraea) and pedunculate (Q. robur) oak from Tronçais, Allier, Nevers and the Vosges, fine-grained and slow-grown; American white oak (Q. alba) gives more sweet vanilla and coconut and is rare in Bordeaux. Acacia appears only in white wines outside Bordeaux. Toast (light, medium, medium+, heavy) changes the chemistry: the heavier, the more smoke, coffee and caramel and the less raw oak tannin; medium is the compromise most choose. The share of new oak is the main lever: 100 % new barrels give vanilla and structure but also a hardness the wine must carry; a second wine gets 5 to 30 % because it lacks the concentration to absorb the wood.Sud dělá tři věci: pouští dovnitř trochu kyslíku, kterým taniny změknou a barva se ustálí; dává vlastní látky (vanilin, laktony kokosu, kouř a karamel z vypálení); a odevzdává vlastní taniny, elagitaniny, které jsou zpočátku tvrdé a suché. Vypálení (light, medium, medium+, heavy) mění chemii: čím silnější, tím víc kouře, kávy a karamelu a méně surového dřevěného taninu; medium je kompromis, který volí většina. Organic, biodynamic and the lunar calendarBio, biodynamika a lunární kalendář
Organic (AB, Ecocert certification) bans synthetic sprays and fertilisers; against mildew only copper and sulphur remain, so organic is costly in a wet year like 2024. Biodynamics (Demeter, Biodyvin) goes further: it treats the soil as a living organism, uses preparations of cow manure (500) and silica (501), and schedules vineyard and cellar work by the lunar calendar, racking and bottling on “fruit” and “flower” days for instance. Scientific proof for the calendar is missing; proof that biodynamic vineyards tend to have livelier soils and deeper roots exists. Why estates do it: vine resilience under stress, clearer terroir, and a market that values it.Bio (certifikace AB, Ecocert) zakazuje syntetické postřiky a hnojiva; proti plísním zbývá měď a síra, proto je bio v deštivém roce jako 2024 drahé na výnos. Grass between the rows, trees and rosesTráva mezi řádky, stromy a růže
Cover crops (enherbement) in every other row are not neglect: grass competes with the vine for water and nitrogen, curbing vigour and shrinking berries, holds the soil against erosion, carries a tractor after rain and feeds soil life. A bare row is tilled so roots go down rather than into surface moisture. Alternating both is the common compromise; in a dry year the grass is mown or mulched so it stops taking water. Trees at plot edges and hedges are a return to agroforestry: shade, wind, insects and birds, humidity. Roses at the row ends are a tradition with a practical core: they catch powdery mildew before the vine does, and once a horse slowed at them before turning. Today they are mostly a calling card.Zatravnění (enherbement) ob řádek není nedbalost: tráva konkuruje révě o vodu a dusík, tím brzdí bujnost a zmenšuje bobule, drží půdu proti erozi, unese traktor po dešti a živí půdní život. Růže na čelech řádků jsou tradice s praktickým jádrem: dostanou padlí dřív než réva, a kdysi kůň u nich zpomalil, než se otočil. Dnes jsou hlavně vizitka.
Fertilising and the soilHnojení a půda
A vine for fine wine must not be overfed: nitrogen raises vigour and yield and dilutes the grapes. Classified estates fertilise little and organically (pomace compost, manure, green manure from the cover crop) and aim at soil life rather than nutrients; mineral fertiliser stays the exception for young plantings or a proven deficit (potassium, magnesium). Plot-by-plot soil analyses and leaf tests are standard now, because the same fertilising on gravel and on clay ends differently.Réva pro kvalitní víno nemá být přehnojená: dusík zvedá bujnost a výnos a ředí hrozny. A horse instead of a tractorKůň místo traktoru
A tractor weighs tonnes and compacts the soil between the rows with every pass; roots and soil organisms then have less air and water. A horse weighs a fraction, does not compact, fits the narrow rows of old plantings and tills shallow and precisely. The price is time and people: a horse team manages a fraction of a machine's day, so it is used by estates that can afford hand work and that commit to biodynamics. It is not folklore for visitors but a soil decision, like cover cropping.Traktor váží tuny a po každém průjezdu stlačí půdu mezi řádky; kořeny a půdní organismy pak mají méně vzduchu a vody. Kůň váží zlomek, nezhutňuje, projede úzkými řádky starých výsadeb a kypří mělce a přesně. Cena je čas a lidé: koňský potah zvládne za den zlomek toho, co stroj, proto ho používají château, která si mohou dovolit ruční práci a která se hlásí k biodynamice.
